RECIPE: Quinoa Salad with Sautéed Shrimp
Looking for a fresh summer quinoa salad, look no further. You can make this as a meal or even an accompaniment side dish.
This is a personal favourite with the rich flavors of cumin and cilantro. This recipe can be modified with different seasonal ingredients and flavors. Try it out and mix it up!
Quinoa Salad
Ingredients
1 cup Quinoa
2 tsp Cumin seeds
2 tbsp Olive oil
1 tsp Garlic powder
1 tsp Salt
1/2 tsp Black Pepper
1 1/2 cups Corn Kernels
1/2 cup Red onion
1 cup Cilantro
1/2 cup Feta cheese
1/2 cup Black olives
Cook quinoa as per directions, set aside and let cool.
In a separate bowl combine cumin seeds, garlic powder, olive oil, salt and pepper.
Add chopped onions, olives, cilantro, corn, crumbled feta and oil mixture to quinoa.
Mix well
Sautéed Shrimp
Ingredients
1 cup Raw deveined shrimp (10-12 pieces)
1 tbsp Olive oil
2 tbsp Flavor God Honey Bbq Seasoning
1 tsp Salt
Combine all ingredients.
Sauté in a cast iron skillet on med for 1-2 minutes per side.
